Since I mentioned this in another post I thought I better give you this recipe too ;D
1lb of ground beef 1 small onion chopped 1 pkg of taco seasoning 2 cups shredded cheddar cheese salsa sour cream lettuce leaves whole (or you can use shredded lettuce)
follow instructions on taco seasoning package. Place seasoned meat into lettuce leaf, top with salsa, cheese and sour cream - roll like a cabbage roll and enjoy.
If you can't be bothered to use a leaf, you can put these items on your plate and top with shredded lettuce - I often do it this way when I am home alone.
Another option to make your own taco shell is as follows: Cheese Taco Shell
Grated Cheddar Cheese Small Non-Stick Skillet Place about 1/3 cup grated cheese in skillet, fry until lightly browned (do not stir). Using metal spatula, carefully flip and brown other side. To form a "taco shell" shape, cool by laying over a rolling pin or the side of a large bowl. Fill with your favorite taco fillings. YUMMY!!!!

Fran, can this be made with baked chips and be good for you? I am just wanting lots of ideas so if my dh quits cooking I will have options! jana

Um - you can buy low carb chips - and you can use chips - just watch the quantity - I am on a 30 carb a day limit - so chips are out - ;D

wow 30 a day. I try to do no more than 50 per meal when I am watching carbs...which isn't at the moment. lol
